Apple and Mango Crumble

Preparation Time: 10 minutes

Cooking Time: 45 mins

Serves: 6

 Granny Smith

2 Granny Smith apples, peeled, cored, sliced

1/2 tspn nutmeg

1 mango, peeled, sliced

2 cups rolled oats

1/3 cup wholemeal plain flour

2 tblspns brown sugar

1 tspn cinnamon

50g butter

1 tblspn desiccated coconut

2 tblspns slivered almonds

Combine the apples with the nutmeg in an ovenproof dish. Cover. Bake at 180C for 15 minutes. Remove from oven. Stir in mango slices. To make the crumble topping: place the flour, sugar, cinnamon and butter in a bowl. Use your fingertips to rub in the butter until the mixture is well-combined and resembles breadcrumbs. Stir in the oats, coconut and almonds. Spoon the mixture over the apples and mango. Bake in a 180C oven for a further 30 minutes; the apples should be tender when pierced with a knife, and the topping a golden brown colour.
