Asian Sprout Salad

Preparation: 15 minutes

Cooking:

Serves 4

1 cup fresh crunchy combo sprouts

100 g fresh bean sprouts

50 g fresh snow pea sprouts

100 g small snow peas, sliced diagonally

bunch chives, cut into 2 cm lengths

1 stick celery, chopped

telegraph cucumber, chopped

Fresh coriander, chopped

1 tblspn shredded fresh mint

1 tblspn toasted sesame seeds, to finish

Dressing

2 tblspn light soy sauce

1 tspn sesame oil

1 tblspn brown sugar

2 tblspn peanut oil

2 tblspn mirin

1 tspn finely sliced green chilli

1 tspn fresh lime juice

Whisk together dressing ingredients. Toss all salad ingredients together and drizzle over

dressing. Top with sesame seeds and serve.

 

Can add pieces of cooked potato and slices fresh mushrooms.
