Avocado Dressing
Suitable for salads and potato dishes
Preparation: 8 minutes
2 avocados, large,
1/2 cup sour cream
juice and rind of 1/2 lime or lemon
1/2 green chilli, finely diced
salt and pepper to taste
To make the dressing, cut the avocado in half, remove the seed and
using a spoon,
scoop out the flesh
with a spoon. Dice and blend all ingredients until smooth and
creamy.
Serve
over salads or boiled potatoes.
