Avocado Veal Schnitzel

Preparation time:           8 minutes

Cooking time:               15 minutes

Serves 4

 

4 veal schnitzels

1 tspn mustard

Juice of 1 lemon

1-2 eggs

2 tblspn plain flour

1 cup dry breadcrumbs

2 tblspn olive oil

2 avocados, peeled and sliced

1 cup grated cheddar cheese

Vegetables to serve

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Brush veal with combined mustard and lemon juice. Dip in beaten egg, then flour, then breadcrumbs.  Pan-fry in olive oil until cooked through and golden brown. 

 

Place avocado slices on each schnitzel.  Top with grated cheese.  Place under heated grill until cheese melts.

 

Serve with steamed seasonal vegetables.
