Avocado and Dill Salsa
Add this one to your Christmas recipe file!
½ Lebanese cucumber, halved lengthways, deseeded, finely diced
1 avocado, finely diced
½ small red onion, finely diced
1 cup dill, finely chopped
Juice of 1 lemon
1 tspn white sugar
¼ cup olive oil
Freshly ground black pepper, to taste
Combine all ingredients in a bowl and mix well. Leave to one side for 20 - 30 minutes before serving.
Serve with fish or poultry.
