Baked Fish with Grapefruit Salsa

Serves 4
4 fillets red emperor
1 tblspn butter
Lemon pepper, to taste
Grapefruit
Salsa
1 red grapefruit, peeled and diced
2 naval oranges, peeled and diced
1 persimmon, peeled and diced
1 tblspn honey
1 tspn sliced mint leaves
Mix grapefruit salsa ingredients together. Place
fillets of fish in an oven proof baking tray. Evenly spread butter over fillets
and top with a dash of lemon pepper. Bake in a hot oven (210ēC) for 15 minutes
or until flesh flakes when tested with a fork. Top with grapefruit salsa and
serve immediately.
