Barbecued Roast Beef with Mushroom Filling

Cooking:   1 hour

Serves 4

1 white onion, peeled and finely chopped

2 tomatoes, skinned and chopped

4 field mushrooms, finely chopped

1 green capsicum, finely chopped

Freshly ground black pepper

1 kg piece blade beef


To make filling, cook onion in a little water until softened.  Add other ingredients, mixing well.  Allow mixture to cool.  Cut a pocket in the beef.  Fill with vegetable mixture.  Secure with skewers or string. Wrap with aluminium foil. Place in a Weber barbecue for approximately one hour or until cooked to your liking. Vegetables such as potatoes, sweet potatoes and pumpkin may be cooked at the same time as the roast. Allow meat to rest, for 15 minutes before carving.  Serve meat with roasted vegetables or a large salad.
