Barbecued Steak Salad

Preparation time: 15 minutes

Cooking time: 10 minutes

Serves 4

 

2 red chillies, chopped finely

2 tblspn grapeseed oil

Juice of 1 lemon

1 tspn ground coriander

500g grilling steak

1 gourmet lettuce, torn into bite sized pieces

4 spring onions, chopped

2 tblspn shredded basil

1 tblspn chopped coriander

1 carrot, cut into fine strips

4 Lebanese cucumbers, cut into strips

 

Combine chillies, oil, lemon juice and ground coriander.  Grill or barbecue steaks until cooked to your liking, brushing frequently with chilli mixture.

 

Combine lettuce, spring onion, basil and coriander.  Arrange on serving plates. Slice steak thinly.  Place steak strips over lettuce mixture.  Top with carrot and cucumber strips.

 

Serve immediately with fresh crusty bread.
