Caramelised Onion

Sometimes called Onion Marmalade


Preparation time:      10 minutes

Cooking time:            30 minutes


4 large white onions, sliced very finely

1 tblspn vegetable oil

 cup brown sugar

cup balsamic vinegar

1 tsp cinnamon

cup raisins


Heat oil.  Cook onions in oil, stirring frequently, until they are soft and golden.  Add brown sugar, vinegar and cinnamon.  Cook gently for a further 10 minutes.  Add half a cup of raisins and cook until thick and golden.


Delicious on bruschetta or with cheese, ham, poultry or grilled meats.
