4 brown onions, large, sliced
1 tblspn brown sugar
2 tblspn olive oil
2 tblspn balsamic or red or white wine vinegar
salt and pepper to taste
Simply slice onions, and cook gently in oil and sugar, slowly until caramelised. Add
the vinegar and season. Place in a sterilised jar and store in the refrigerator.
Add fresh thyme before serving as a side dish. Marries well with turkey, ham,
bruschetta with blue cheese.
