Cheesy Okra and Mushrooms

Preparation: 10 minutes

Cooking: 30 minutes

Serves 4

2 rashers bacon, trimmed of fat and chopped

1 onion, chopped

2 stalks celery, chopped

1 tblspn tomato paste

1 cup chicken or vegetable stock

3 cups sliced field mushrooms

3 cups halved okra pods

cup freshly chopped parsley

Freshly ground black pepper

cup cubed fetta cheese

 

Heat a large saucepan and add bacon. Cook for about 2 minutes, stirring constantly. Add onion and celery. Cook for about 3 minutes. Mix together tomato paste and stock. Add to saucepan. Cover saucepan. Cook for about 5 minutes. Add mushrooms and okra. Cover saucepan. Simmer slowly for about 15 minutes or until okra are tender. Add extra stock if necessary. Stir through parsley, pepper and cheese. Cook for about 1 minute. Serve piping hot with fresh crusty bread.
