Cherry and Coconut Muffins

Serves 12


2 cups SR flour

125g butter

1 cup coconut

1 cup fresh or canned pitted cherries

2/3 cup castor sugar

1 cup coconut milk

1 beaten egg

1 - 2 tblspn milk


Combine flour and butter in food processor until mixture resembles breadcrumbs.


Place all ingredients into large bowl.


Mix gently until just combined. Place mixture into greased 12 hole muffin tin.


Bake at 220ºC for 20 minutes
