Chilli Con Carne

Serves 4

1 tblspn oil

500 g minced beef

1 onion, chopped

1 clove garlic, crushed

4 tomatoes, chopped

2 cups water

1 tblspn tomato paste

1 red chilli, finely chopped

3 cups cooked diced Ruby Lou potatoes

425 g can red kidney beans, drained

Sour light cream

Spring onions, to garnish

Natural corn chips, to serve


Heat oil in a saucepan. Cook mince, onion and garlic. Sauté until onion is soft and mince is well browned. Mix in tomatoes, water, tomato paste and chilli. Bring to the boil. Reduce heat. Simmer for 20 minutes. Add potatoes and kidney beans. Warm through. Divide into serving bowls. Top with sour cream and chopped spring onions. Serve with warm corn chips.
