Chilli Tomato and Mushroom Pasta

Cooking: 20 minutes

Serves 4

400 g pasta



6 ripe tomatoes, chopped

2 tblspn tomato paste

1 clove garlic, crushed

1 onion, chopped

1 red chilli, deseeded and sliced

2 cups chopped cup mushrooms

cup white wine

1 tblspn freshly chopped basil

Parmesan cheese, to serve


Cook pasta according to directions on the packet. To make sauce, place tomatoes, tomato paste, garlic, onion, chilli, mushrooms and wine in a saucepan. Simmer, uncovered, for about 20 minutes. Before taking off heat, add basil. Serve hot sauce over pasta. Sprinkle with Parmesan cheese to serve.
