Christmas Ice-Cream

Serves 8 - 10

2 cups mixed dried fruit

cup fresh cherries, pitted

cup fresh mango, cubed

Grated rind of one orange

3 tblspn brandy

2 litres good vanilla ice cream

cup choc bits

cup chopped pecans

 

 

Combine fruits, orange rind and brandy in a bowl. Allow to stand for 20 minutes. Soften ice cream a little. Add fruit mixture, choc bits and pecans.

Line a pudding bowl or cake tin with plastic wrap. Spoon mixture in, press down firmly. Cover with plastic wrap.

Freeze overnight or up to six months if well wrapped.

Cut into wedges to serve. Serve with your favourite chocolate sauce.
