Citrus Pikelets

Preparation: 4 minutes

Cooking: 3 minutes

1 cup self raising flour

Zest of one orange

1 egg

1 cups orange juice, freshly squeezed

 

Sift flour into a medium sized bowl.

Add egg, orange juice and orange zest.

Stir until combined.

Heat a frypan which has been lightly greased with butter. Drop dessertspoons of the batter onto pan.

When the bubbles start to form, turn pikelets and brown on other side.

Serve.
