Citrus Red Mullet

Cooking:   15 minutes

Serves 4


3 tblspn honey

1 tblspn grated orange rind

1 tblspn soy sauce

1 tspn freshly grated ginger

1 tblspn fresh orange juice

¼ cup white wine

Freshly ground black pepper, to taste

1 orange, peeled and sliced

1 red grapefruit, peeled and sliced

4 red mullet fillets


In a saucepan combine honey, orange rind, soy sauce, ginger, orange juice, wine and pepper.  Heat gently for about 4 minutes - do not boil.  Pour about half of sauce into a little bowl for basting. Add citrus pieces to remaining sauce in pan.  Heat through only.  Grill red mullet fillets for 2-3 minutes each side, basting generously with sauce. Serve fillets with sauce and citrus pieces.  Accompany with hot, sautéed potato slices.  Garnish with fresh coriander or parsley.
