Deluxe Mushroom and Tomato Salad

 

Preparation time:      15 minutes

Cooking time:            10 minutes

Serves 4

 

4 cups mixed salad greens

2 cups button mushrooms

punnet cherry tomatoes

1 Lebanese cucumber, sliced

6 spring onions, sliced

eggplant, sliced into thin strips

 

Dressing

cup olive oil

2 tblspn vinegar

1 clove garlic, crushed

1 tblspn fresh chopped basil

Freshly ground black pepper

 

Combine all salad ingredients, except eggplant, in a bowl. Place eggplant strips on a lightly oiled baking tray.  Brush with a little oil.  Sprinkle with pepper.  Place under a medium-hot grill.

 

Cook for about 3 minutes each side, or until tender and golden. Add cooked eggplant strips to salad. Whisk dressing ingredients together. Drizzle dressing over salad and serve with your favourite meat.
