Easy Baked Fish

Preparation: 10 minutes

Cooking: 40 minutes

Serves 4

2 onions, thinly sliced

2 cloves garlic, crushed

2 stalks celery, thinly sliced

4 tomatoes, chopped

1 cup tomato puree

cup chopped basil

4 fish fillets

 

Cook onions, garlic and celery with a little water in a saucepan until soft. Add tomatoes, puree and basil. Simmer 10 minutes or until slightly thickened. Place half the vegetable mixture in an oiled baking dish. Arrange fish fillets over vegetables in a single layer. Cover with remaining vegetable mixture. Cook at 180C for 30 minutes or until fish is just cooked. Serve with boiled or steamed potatoes and lemon wedges.
