Fish Cutlets with Olive Potato Mash

5 potatoes, peeled

1 clove garlic, crushed

2 tblspn olive oil

1 tblspn black olives, chopped

1 tblspn capers

3 spring onions, finely chopped

4 fish cutlets (Spanish mackerel or Salmon)

1 tblspn lemon juice

 

Cook potatoes until tender.  Mash together with 1 clove of crushed garlic and olive oil. Stir through capers and spring onion. Grill fish cutlets for about 3-4 minutes on both sides until flesh starts to flake. Sprinkle immediately with lemon juice. Pile mashed potato on individual serving plates.  Place fish cutlets on top of potato.  Sprinkle with fresh chopped flat-leaf parsley to serve.
