Fish on Avocado and Corn Salsa

Serves 4

 

1/2 cup fresh corn kernels, cooked

1 avocado, chopped

1/2 small red capsicum, chopped

2 spring onions, chopped

Freshly ground black pepper

2 tblspn lemon juice

Fresh coriander to garnish

4 fish fillets

 

Combine corn, avocado, capsicum, spring onions, black pepper, lemon juice and coriander. Toss gently. Grill fish until flesh flakes with a fork. Serve fish over salsa. Garnish with fresh coriander.
