Gingered Citrus and Strawberries
Preparation: 10 minutes
Refridgerate: 30 minutes
1 punnet strawberries, washed and hulled
2 oranges, or 3 mandarins, peeled and segmented
½ cup fresh orange juice
2 tblspn sultanas
½ tspn crushed ginger
3 tblspns sunflower seeds
Combine orange juice, sultanas and ginger in a serving bowl. Fold through chopped orange or mandarin segments. Cover and refrigerate until 30 minutes before serving. Before serving, gently fold in strawberries.
Sprinkle with sunflower seeds.
Serve with yoghurt or ricotta blended with orange juice and honey.
