Grapefruit Dressing

This marries well with seafood, watercress, rocket salads.

Preparation: 4 minutes

Cooking:

Makes about 1 cup of

1/2 cup grapefruit juice

2/3 cup fruity olive oil

1 tablespoon chopped chives or red onion

1 teaspoon Dijon mustard or seeded mustard

1 teaspoon red wine vinegar or balsamic vinegar

1 teaspoon honey or apple juice concentrate

salt and pepper

 

Combine all ingredients into a jar, seal the jar, shake to combine and serve on

your favourite salad.

This vinaigrette will keep for up to 2 days in the fridge.
