Grapefruit dipping sauce
This can be used for dipping in fresh spring rolls, fried squid or a dressing for a
green pawpaw salad
Preparation: 6 minutes
Cooking: 3 minutes
Make about 1 cup
1/3 cup brown sugar
1/3 cup fresh grapefruit juice
1/3 cup water
2 tablespoons sweet chilli sauce
1 teaspoon fish sauce
1 tablespoon chopped coriander leaves or mint leaves
1/4 Lebanese cucumber, finely chopped
Combine sugar, grapefruit juice, water and chilli in saucepan. Bring to the boil and
simmer for three minutes.
Add fish sauce, allow to cool then add cucumber and coriander or mint.
