Grilled Fish with Ratatouille

Preparation: 15 minutes

Cooking: 20 minutes

Serves 4

2 tspn olive oil

1 clove garlic, crushed

1 onion, sliced

3-4 tomatoes, chopped

1 large zucchini, sliced

1 green capsicum, chopped

3 tblspn tomato paste

1 tblspn chopped fresh basil

1 small eggplant, chopped

8 boneless fish fillets

Juice of 1 lemon

2 tblspn grated Parmesan cheese


Brush the base of a pan with olive oil.  Cook garlic and onion until soft.  Add tomato, zucchini, capsicum, tomato paste, basil and eggplant.  Cook over low heat for approximately 20 minutes or until tender.  Meanwhile sprinkle fish with lemon juice.  Grill for 3 minutes each side. Serve with jacket potatoes. Stir Parmesan cheese through ratatouille vegetables just before serving.  Serve fish with ratatouille and jacket potatoes.
