Ham Ricotta and Salad Pockets

Serves 4

4 pitta pockets

1 tblspn Dijon mustard

200g leg ham

1 cup ricotta cheese

1 red onion, finely sliced

2 cups mixed salad to fill pockets

 

 

 

With a sharp knife, cut pitta pockets open, being careful not to cut through.

Spread each sparingly with mustard on one side. Fill pocket with ham, ricotta,

red onion and salad. Serve immediately.
