Honeyed Ginger Breakfast Jewels

Preparation: 10 minutes

Serves 4

 

4 kiwifruit, peeled and sliced

2 oranges, peeled and segmented

cup fresh orange juice

1 tblspn honey

2 tblspn sultanas

tspn grated fresh ginger

3 tblspn sunflower seeds or natural muesli

 

Combine orange juice, sultanas, honey and ginger in a serving bowl.

 

Fold through orange segments. Cover and refrigerate until 30 minutes before serving.

 

Before serving, gently fold in kiwifruit slices. Sprinkle with sunflower seeds or muesli.

 

Serve with yoghurt or ricotta blended with orange juice and honey.
