Preparation: 10 minutes
4 kiwifruit, peeled and sliced
2 oranges, peeled and segmented
¾ cup fresh orange juice
1 tblspn honey
½ tspn grated fresh ginger
Combine orange juice, honey and ginger in a serving bowl.
Fold through orange segments. Cover and refrigerate until 30 minutes before serving.
Before serving, gently fold in kiwifruit slices.
Serve on meringue nests or short pastry tart cases with lemon curd or crème fraiche.
