Leek Mushroom and Cheese Frittata

Preparation:  10 minutes

Cooking:  35 minutes

Serves 4

1 tblspn olive oil

3 leeks, thinly sliced

1 zucchini, cut into thin slices

2 cups sliced mushrooms

White pepper to taste

1 tblspn freshly chopped parsley

5 eggs, lightly beaten

1/3 cup grated parmesan cheese

1/3 cup grated low fat cheddar cheese


Heat oil in frying pan. Add leeks. Cook for about 3 - 4 minutes or until softened. Add zucchini and mushrooms. Place lid on pan. Cook for about 8 minutes or until just tender. Transfer to a bowl. Cool. Add remaining ingredients to the bowl. Brush frying pan lightly with oil. Add leek and egg mixture to frying pan. Cook over low heat for about 15 minutes or until egg is almost set. Cook under hot grill for about 4 - 5 minutes or until top is set and golden. Stand 5 minutes before serving. Accompany with a fresh tomato based salad and fresh crusty bread.
