Low Fat Apple and Oatmeal Muffins

Delicious low fat, high fibre muffins that are very moist and satisfying.

Preparation: 35 minutes

Cooking: 30 minutes

Makes 12

1 cups cooking oats

1 cups fresh apple juice

cup sugar

2 tspn vanilla extract

1 cups wholemeal flour

2 tspn baking powder

2 red delicious apples, grated with skin

1 tspn cinnamon

4 egg whites, beaten to soft peaks

Apple wedges, to garnish (optional)

 

Preheat oven to 170C. Soak the oats, apple juice, sugar and vanilla for 30 minutes. Mix in the flours, grated apple and cinnamon. Fold in the egg whites. Spoon into muffin tins. Top with sliced apple wedges if desired and bake for 25 - 30 minutes or until muffins are cooked though and golden.
