Microwave Marmalades

Marmalade sets best if fruit is not too ripe.

Preparation: 15 minutes

Cooking: 30 minutes

Makes 3 - 4 cups

200 mls water

3 cups sugar

 

Grapefruit Marmalade

3 grapefruit

juice of 1 lemon

 

or

Lemon Marmalade

6 lemons

 

or

Seville Orange Marmalade

4 seville oranges

1 lemon

 

or

 

 

Cumquat Marmalade

1.5 litres quartered cumquats

Remove seeds and soak them overnight in the 200mls water to extract the pectin.

 

 

Cut fruit into chunks.  Place in 2 litre microwave safe jug or bowl.  Add water.

Microwave on HIGH for 10 minutes.

Add sugar.  Stir to dissolve.

Microwave on HIGH for 10 minutes then MEDIUM HIGH for a further 10

minutes.   (Watch in case it boils over).

By this time it should have reached gel point.  A teaspoon of marmalade on a cold

saucer should set.

Cool a little.  Pour into sterilised jars.  Cover and label when cool.
