Moroccan Carrots

Serves 4

5 medium carrots, peeled and sliced diagonally

1 tblspn honey

2 tblspn lemon juice

2 tspn curry paste or powder

2 tblspn vegetable oil

˝ tblspn brown sugar

2 tblspn raisins

Coriander or parsley to serve


Microwave or steam carrots until almost tender. Combine honey, lemon juice and curry in a small bowl. Heat oil in a large pan. Add carrot pieces. Sauté for 2 minutes. Sprinkle with brown sugar, add raisins and cook for 2 minutes. Add honey mixture and cook until well-coated. Serve sprinkled with coriander or parsley leaves.
