Nectarine and Chicken Salad
Preparation: 10 minutes + 30 minutes marinating
1/4 cup oil
1 tblspn vinegar
1 tblspn lemon juice
1/4 cup basil leaves, chopped finely
1/2 tspn nutmeg
1/2 tspn white pepper
500g cooked chicken breasts, cut into strips
4 nectarines, stones removed, sliced
1 gourmet lettuce, washed and torn
Combine oil, vinegar, lemon juice, basil, nutmeg and pepper in a screw-top jar.
Shake well. Place chicken and nectarines into a large bowl. Pour dressing over. Marinate in the fridge for about 30 minutes. Arrange lettuce on individual plates. Top with chicken and nectarine mixture to serve.
