New Heights Caesar

Serves 4

 

4 rashers bacon, into strips

1 cos lettuce, sliced

1/2 cup Caesar dressing

4 boiled eggs, peeled, quartered

1/2 cup sliced Kalamata olives

1/2 cup sliced sun-dried tomatoes

1 avocado, sliced

1 cup croutons

200g shaved Parmesan

 

Preheat oven to 200ēC. Place bacon strips onto a greased oven tray. Roast for 20 minutes. Place lettuce into a large bowl. Drizzle with Caesar dressing and toss to combine. Divide onto individual serving plates. Sprinkle evenly over each salad. Allocate one egg, cut into quarters for each person. Arrange olives, sun-dried tomatoes, avocado and croutons over each salad. Finish with shaved Parmesan to serve.
