Oriental Avocado and Tuna Pasta Salad

Preparation:     10 minutes

Cooking:   15 minutes

Serves 4 - 6

300g pasta shapes

2 tblspn mayonnaise or equiv.

1/4 cup finely chopped fresh coriander

1 green chilli, deseeded, sliced finely

3 spring onions, sliced

425g can tuna in brine, drained, flaked

1 punnet halved cherry tomatoes

2 avocados, peeled, stone removed, sliced

2 tblspn lemon juice

Lettuce leaves to serve

 

Cook pasta according to directions on packet.  Drain.  Place warm pasta in a large serving bowl.  Gently stir through coriander, chilli, tuna, cherry tomatoes, avocados and lemon juice until well combined. Can be served warm or cold. Arrange lettuce leaves onto serving plates. Spoon pasta salad mixture onto lettuce leaves to serve.
