Pacific Style Whiting with Lemon and Coconut

Preparation:  15 minutes

Cooking: 5 minutes

Serves: 4

 lemon

1/4 cup plain flour

1/4 cup fresh grated or dessicated coconut

1/2 tspn turmeric

1/2 tspn chilli powder

lemon, rind grated

1/4 tspn freshly ground black pepper

tspn salt flakes

1 tspn vegetable oil

500g whiting fillets

2 eggs, lightly beaten

Combine flour, coconut, turmeric, chilli powder, lemon rind, black pepper and salt. Dip whiting in

beaten eggs. Toss into flour mixture. Cook in a lightly oiled frying pan on a moderate heat until opaque right through. Serve whiting with chunks of cucumber, baby cos lettuce, chopped mint and halved grape tomatoes, all dressed with lemon.
