Pear, Avocado and Rocket Open Sandwiches

The sandwich, but different….

Serves: 4

8 slices sourdough bread

2 ripe avocados

2 ripe Packham pears, quartered, cored and sliced

1 cup baby rocket leaves, washed

100 g shaved parmesan

Freshly ground black pepper

Lemon wedges, to serve

Lightly toast the sour dough bread if desired. Roughly mash ¼ of the avocados onto each

slice and season with a pinch of salt. Top with slices of pear, rocket leaves and shaved

parmesan. Grind over black pepper and serve with lemon wedges.
