Pork and Apple Burgers

Serves:           4

 

500 g lean pork mince

1 egg, lightly beaten

1 onion, grated

2 tblspn chopped fresh parsley

1 tspn Worcestershire sauce

1 Granny Smith apple, peeled, cored and cut into 4 thick rings

4 thick slices mozzarella cheese, cut to same size as apple

Flour, for coating

2 tspn olive oil

 

In a large bowl, combine the mince, egg, onion, parsley and sauce. With wet hands, shape into 8 patties, 1cm larger than the apple rings. Place a slice of apple on 4 of the patties, followed by the cheese. Place remaining patties on top and pinch edges to seal. Roll in flour and BBQ, grill or char-grill in a pan heated with olive oil for 8 minutes on each side or until browned and cooked through. Serve with a salad or on a barbecued burger roll.
