Potato Chilli Con Carne

Serves 4

500g mince beef

1 large onion, diced

2 cloves garlic, crushed

35g sachet taco seasoning

800g tin crushed tomatoes

1 tblspn tomato paste

2 Delaware potatoes, diced and cooked

125g tin red kidney beans, drained

200g corn chips

1 cup grated cheese

1/2 cup sour cream

Spring onions to serve

 

Fry the mince, onion and garlic together for 10 minutes until all meat is browned. Add taco seasoning and fry for a further minute. Add the crushed tomatoes and tomato paste and simmer for about 15 minutes until thickened. Add the potatoes and kidney beans, warm through. Arrange corn chips and grated cheese on serving plates. Spoon

over chilli con carne. Serve with sour cream and spring onions.
