Potato Crusted Meatloaf

Cooking: 45 minutes

Serves 4


1 cup fresh breadcrumbs
onion, finely chopped
cup parmesan cheese, grated
1 tblspn fresh basil, chopped
2 eggs, lightly beaten
2 cloves garlic, crushed
1/3 cup tomato sauce
1 tblspn Worcestershire sauce
500 g lean minced beef
Salt and freshly ground black pepper
500 g Mondial potatoes, peeled and cooked
cup milk



Combine all ingredients except potatoes and milk in a large bowl and mix well. Spoon mixture into a loaf tin. Bake in a preheated 200C oven for 30 minutes until the meatloaf is browned all over. Mash potato with milk. Spread over meatloaf. Bake a further 15 minutes to complete cooking and brown the potato topping.
