Roasted Vegetables with Couscous

Cooking: 25 minutes

Serves 4

1 gold sweet potato, cubed

1 tblspn butter

2 zucchini, cut into strips

10 snow peas, trimmed and halved

1 cups stock

2 cups milk

2 cups couscous

1 sprig coriander, chopped

Natural yoghurt

Lemon slices

 

Microwave sweet potato until just tender. Place butter, sweet potato, zucchini and snow peas in a baking tray. Cook at 200C for 10 minutes. Bring stock and milk to the boil. Add couscous. Cover and stand for 5 minutes. Stir in coriander. Serve couscous topped with vegetables and yoghurt. Top with lemon slices.
