Salmon Steaks with Ratatouille

Preparation: 15 minutes

Cooking: 30 minutes

Serves 4

2 tspn olive oil

1 clove garlic, crushed

1 onion, sliced

3-4 tomatoes, chopped

1 large zucchini, sliced

1 green capsicum, chopped

3 tblspn tomato paste

1 tblspn chopped fresh basil

1 small eggplant, chopped

4 salmon steaks

Juice of 1 lemon

2 tblspn grated Parmesan cheese

 

Heat oil in a non-stick pan.  Cook garlic and onion for 3-5 minutes.  Add

tomato, zucchini, capsicum, tomato paste, basil and eggplant.  Cook over low

heat for approximately 20 minutes, stirring occasionally.  Meanwhile, sprinkle

salmon steaks with lemon juice.  Grill or bbq for 3 minutes each side. Stir
