Special Potato and Mushroom Pizza

Preparation time: 10 minutes

Cooking time: 30 minutes

Serves 4


2 Royal Blue potatoes, skin on

2 tblspn tomato paste

1 cup ricotta cheese

1 tblspn finely chopped coriander

2 field mushrooms, sliced

1 green capsicum, sliced

1-2 red chillies, seeded, finely sliced (optional)

cup grated Parmesan or romano cheese


Slice potatoes thinly lengthwise - about 0.5cm thick.  Arrange in a single layer on a lightly greased pizza tray. Spread tomato paste over potato slices.  Spread ricotta cheese over.  Top with the remaining ingredients, finishing with the Parmesan. Bake in a hot oven (200oC) for 30 minutes, or microwave on high for 10-12 minutes
