Spicy Shrimp and Tomato Mee Goreng

Serves 4

1 tblspn oil

1 onion, diced

3 cloves garlic, crushed

1 red chilli, sliced

2 Royal Blue potatoes, cubed and cooked

250g shrimp meat

1/4 cabbage, shredded

500g egg noodles

2 tomatoes, diced

1 cup tomato and chilli sauce combined

2 tblspn soy sauce

1 cup bean shoots

 

Heat oil in a large non-stick pan. Fry onions, garlic and chilli for 3 minutes. Add

cooked potato, shrimp and cabbage. Fold together for 3 minutes. Microwave

noodles for 1 minute. Add to pan with diced tomato, tomato chilli sauce and soy

sauce. Heat through for 2-3 minutes. Fold through bean shoots just before serving.
