Spicy Tropical Pork Salad

Serves 4

500g pork mince

2 tblspn chilli sauce

1 cos lettuce

1 avocado, peeled, seeded, sliced

1 tin pineapple slices in juice

2 tblspn oil

4 spring onions, sliced

 

In a bowl, combine pork mince and chilli sauce. Allow to marinate in fridge for 10 minutes. Meanwhile, wash and slice lettuce. Divide onto large salad plates. Add sliced avocado. Cut pineapple slices into quarters, retain juice. Arrange over lettuce and avocado. Roll pork mince into balls with clean hands. Heat oil in a non-stick pan. Cook meatballs for 10-15 minutes or until browned all over. Place onto salad. Sprinkle with spring onions and drizzle each salad with a teaspoon of pineapple juice to serve.
