Spring Asparagus with Pasta

Preparation: 15 minutes


Serves 4

1/4 cup olive oil

1 cup fresh breadcrumbs

1 tspn lemon pepper seasoning

2 bunches asparagus, sliced

2 cloves garlic, crushed

400g dried ribbon pasta

6 cups chicken stock

Freshly grated Parmesan cheese


Heat oil in a large pan.  Add breadcrumbs and lemon pepper seasoning.  Stir until browned and crisp.  Remove from pan. Add asparagus and garlic to pan, with a little extra oil if necessary.  Stir-fry 2-4 minutes, until asparagus in just tender-crisp.  Meanwhile cook pasta in boiling chicken stock for 12 minutes or until al dente. Place in a large bowl. Add Parmesan and asparagus to hot cooked pasta.  Serve in four pasta bowls.  Top with breadcrumb and lemon pepper mixture.
