Spring Onion and
Swiss Brown Mushroom Fritters

2 tblspn olive
oil
400g Swiss
brown mushrooms, sliced
2 cloves
garlic, crushed
1 1/3 cups SR
flour, sifted
1 tspn ground
coriander
Salt and
pepper to taste
2/3 cup milk
2 eggs,
lightly beaten
½ bunch spring onions, peeled, white and green sections
thinly sliced
Extra olive
oil for frying
Chutney and
fresh coriander to serve
Heat 2 tblspn
oil in a frying pan over a medium heat.
Add mushrooms and garlic. Cook
for 3 minutes, stirring often. Allow to
cool. Combine flour, coriander, salt and pepper in a large bowl. Stir in eggs
and milk. Add mushrooms and spring
onions. Stir to combine. Heat extra oil
in pan. Spoon mixture into hot oil. Cook fritters in batches until golden, three
minutes each side. Remove and drain on paper towel. Serve with chutney and
sprinkled with fresh coriander.
