Summer Leaf Salad with Mango, Avocado and Grapes

Preparation: 12 minutes

Serves: 4

2 avocados, sliced

1 mango, large, chopped into pieces

1 cup grapes, seedless

selection of salad greens,

1 cup bean sprouts

1/2 cup mushrooms, thinly sliced

prawns, smoked salmon ,  cold cooked turkey, or ham,

1/2 cup pecan or macadamia nuts, toasted

 

Dressing:

6 tblsn oil

3 tspn red wine vinegar or raspberry vinegar

2 tspn wholegrain mustard

2 tspn honey

salt and pepper

1 tspn mint chopped

 

Place the salad leaves and bean sprouts onrto a platter. Mix salad dressing

ingredients together.

Arrange mangos, avocado,  mushrooms, grapes and seafood, turkey or ham and

pour over the dressing.

Sprinkle with the roasted nuts.

Great for Christmas and for using left over turkey or ham.
