Summer Mango Dessert

Serves 4

2 mangoes, peeled and diced

1 cup flame seedless grapes

1 punnet strawberries, hulled and halved

1 tblspn castor sugar

cup fresh orange juice

1 tblspn brandy

200 g fresh ricotta cheese

1 tspn vanilla essence

Pulp of 2 passionfruit


Place mangoes, grapes and strawberries in a large bowl. Sprinkle with sugar. Combine orange juice and brandy in a separate bowl. Pour over fruit. Stand for at least 10 minutes in refrigerator. Stir occasionally. In a small bowl combine ricotta, vanilla and passionfruit. Mix well. To serve, place fruit in glasses topped with passionfruit ricotta mixture.
