Two Potato Provencal

Serves 4

500g gourmet potatoes

500 g Royal Blue potatoes

1/3 cup olive oil

1 red onion, sliced

1 red capsicum, sliced

2 medium zucchini, sliced

2 tspn fresh rosemary

Juice of two lemons

2 cloves garlic

1 tblspn shredded basil

100g sundried tomatoes

 

Boil potatoes, drain and then cut medium sized potatoes into slices. Heat oil in large pan. Add onion, capsicum, zucchini, sundried tomatoes and rosemary. Cook, stirring until onion is soft. Add potatoes. Cook 10 minutes or until lightly brown. Add lemon juice, roasted garlic and basil. Mix well. Serve hot or cold.
